I love stretching meals out and discovering what I can create. I hate wasting food. And I really love left-overs. I can’t understand people who don’t appreciate left-overs. If you are one of those people – sorry but you’re weird. Honestly… How can you not like left-overs?
I roasted a whole chicken a week ago. The first meal I had from that bird was some breast meat, a thigh and a leg, accompanied by mashed potatoes and some shitty gravy. By “shitty gravy” I mean I suck at making gravy and probably will until the day I die. I try though. I really do. But anyway….
After the “shitty gravy” dinner, I removed all the meat from the bones of the chicken and then pressure-cooked the rest of the bird carcass down and made a fantastic chicken broth, of which I then created a basic, garlic-heavy chicken soup from. I love garlic!
The first soup dinner that I enjoyed from that first pot I added some dumplings to, which made for such a filling meal I wanted to pass out… The next day, I reheated the soup for lunch and added orzo pasta… You know – to “round it out”. And to round my body fat out some more as well…
Lastly, for the final round of “soup again!” reheated, I added some cooked rice and some shredded cabbage and carrots. And just for fun, I went out into the yard and picked some young Plantain leaves to add into the soup for some extra vitamins and color.
.That was it for the soup finally. It’s all gone, so It’s time to start over and come up with the next soup adventure. And lucky for me, it’s still “soup weather” here in the Northeast… ~A
